Ingredients

  • 1 (30-ounce) package frozen shredded hash browns
  • 1 1/2 cups smoked ham chopped
  • 3 tablespoons olive oil
  • kosher salt to taste
  • freshly ground black pepper to taste
  • 1 1/2 cups sharp cheddar cheese shredded
  • 2 tablespoons fresh chives chopped

Directions

  • Preheat the oven to 400 degrees F.
  • In a large bowl, add the hash browns, the ham, the olive oil, the salt, and the black pepper and stir to combine.
  • Cut six (12-16-inch) pieces of foil.
  • Lightly coat the foil pieces with nonstick spray.
  • Divide the hash brown mixture into 6 equal portions.
  • Add the 1 portion of the hash brown mixture to the center of each piece of the prepared foil.
  • Sprinkle the hash brown mixtures evenly with the cheddar cheese.
  • Fold up the four sides of each piece of foil to create packets, making sure the hash brown mixtures are covered completely and the packets are sealed.
  • Place the packets on a baking sheet.
  • Bake until the cheese has melted and the hash browns are heated through, about 20-25 minutes.
  • Serve immediately garnished with the chives.
