Ingredients
- 1 (30-ounce) package frozen shredded hash browns
- 1 1/2 cups smoked ham chopped
- 3 tablespoons olive oil
- kosher salt to taste
- freshly ground black pepper to taste
- 1 1/2 cups sharp cheddar cheese shredded
- 2 tablespoons fresh chives chopped
Directions
- Preheat the oven to 400 degrees F.
- In a large bowl, add the hash browns, the ham, the olive oil, the salt, and the black pepper and stir to combine.
- Cut six (12-16-inch) pieces of foil.
- Lightly coat the foil pieces with nonstick spray.
- Divide the hash brown mixture into 6 equal portions.
- Add the 1 portion of the hash brown mixture to the center of each piece of the prepared foil.
- Sprinkle the hash brown mixtures evenly with the cheddar cheese.
- Fold up the four sides of each piece of foil to create packets, making sure the hash brown mixtures are covered completely and the packets are sealed.
- Place the packets on a baking sheet.
- Bake until the cheese has melted and the hash browns are heated through, about 20-25 minutes.
- Serve immediately garnished with the chives.
