Ingredients

  • 2 1/2 tablespoons mayonnaise
  • 1 1/2 tablespoons ketchup
  • 1 1/2 pounds ground beef
  • 3 ounces cheddar cheese coarsely grated
  • kosher salt to taste
  • black pepper to taste
  • 4 hamburger buns split
  • green leaf lettuce leaves to taste
  • 2 tomatoes sliced
  • 1/2 pound sliced bacon cooked crisp

Directions

  • Preheat the grill to medium.
  • In small bowl, add the mayonnaise and the ketchup and stir to combine. Set the sauce mixture aside.
  • Divide the ground beef into 8 equal portions.
  • Shape 4 of the beef portions into 1/2-inch patties.
  • Using your clean thumbs, make shallow 2-inch-wide indents in the tops of the patties.
  • Divide the cheese evenly among the patties, filling up the indents.
  • Form the remaining beef portions into 1/2-inch-thick patties.
  • Top the indented, cheese-filled patties with the non-indented patties, putting the cheese in the center and pinching the edges firmly together to close.
  • Season both sides of the stuffed patties with the salt and the black pepper.
  • Transfer the patties to the grill and cook, covered, until the patties reach an internal temperature of 145 degrees F for a medium doneness, about 3-4 minutes per side.
  • Spread the cut-sides of the buns evenly with the sauce mixture.
  • Top the bottom buns evenly with the lettuce leaves and the burgers.
  • Add the the tomatoes and the bacon to the burgers.
  • Close the burgers and serve.
