Ingredients

  • 3 cups shredded hash browns
  • 3/4 cup cheddar cheese shredded
  • 1 cup ham diced
  • 1/4 cup green onions sliced
  • 1 (12-ounce) can evaporated milk
  • 4 eggs
  • salt to taste
  • black pepper to taste

Directions

  • Preheat the oven to 350 degrees F.
  • Coat a 9x13-inch baking dish with nonstick cooking spray.
  • In the bottom of the prepared casserole dish, add the hash browns and spread them out evenly.
  • Sprinkle the cheddar cheese and the ham evenly over the hash browns.
  • Add the green onions evenly over the cheese and the ham.
  • In a mixing bowl, add the evaporated milk, the eggs, the salt, and the black pepper and whisk until completely blended.
  • Pour the egg mixture into the baking dish.
  • Bake until a knife inserted into the center of the casserole comes out clean, about 45 minutes.
  • Allow the casserole to rest for 10 minutes.
  • Slice and serve.
