Ingredients
For the casserole:
- 1 (14-16 ounce) loaf sourdough or French bread cut into chunks
- 8 large eggs
- 2 1/2 cups milk
- 1/2 cup heavy cream
- 2 cups FunfettiĀ® cake mix
- 2 teaspoons ground cinnamon
- 2 teaspoons vanilla extract
- 5 tablespoons multicolored sprinkles
For the topping:
- 1 cup Funfetti cake mix
- 1 stick salted butter cut into pieces
- icing or frosting optional, to taste, of your choice, for serving
Directions
- Grease a 9x13-inch casserole dish.
- In a large bowl, add the bread chunks.
- In a separate large bowl, add the eggs, the milk, the heavy cream, 2 cups of the cake mix, the cinnamon, and the vanilla extract and whisk to combine.
- Pour the egg mixture over the bread chunks and gently stir to combine.
- Pour the bread mixture into the prepared casserole dish and spread it out evenly.
- Spread the sprinkles evenly over the top of the bread mixture.
- Cover the casserole dish and chill it for at least 8 hours and up to overnight.
- Preheat the oven to 350 degrees F.
- Uncover the casserole and bake for 25-30 minutes.
- In a bowl, add the remaining cake mix and the butter and mix to combine until a crumbly mixture forms.
- Sprinkle the crumbly mixture on top of the casserole and bake until the casserole and the topping are cooked through, about 10-25 minutes.
- Serve the casserole warm with the icing.
