Ingredients
- 4 tablespoons butter divided
- 1 (8-ounce) package frozen seafood mix
- 4 cloves garlic minced
- 1 (28-ounce) can whole peeled tomatoes
- 1/4 teaspoon red pepper flakes optional
- 8 ounces fettuccine or linguine pasta
- 1/2 teaspoon salt
- fresh parsley optional, to taste, for garnish
Directions
- In a large skillet over medium heat, melt 2 tablespoons of the butter.
- Add the seafood mix to the melted butter and cook, while stirring, until the seafood mix reaches an internal temperature of 145 degrees F, about 3-5 minutes.
- Transfer the seafood mixture to a bowl.
- In the same skillet over medium heat, melt the remaining butter.
- Add the garlic to the melted butter and cook, while stirring, until the garlic has just softened and becomes very fragrant, about 1-2 minutes.
- Add the tomatoes and their juices and the red pepper flakes to the garlic and stir to combine.
- Using a spoon or a spatula, carefully break the tomatoes into pieces.
- Allow the tomato mixture to come to a simmer.
- Reduce the heat to medium-low.
- Simmer the tomato mixture, while stirring occasionally and continuing to break up the tomatoes, until the flavors meld together and the tomato mixture thickens, about 30 minutes.
- In a large pot of salted, boiling water, add the fettuccine and cook it to al dente, according to the package directions.
- Drain the pasta.
- Add the salt to the tomato mixture and stir to combine.
- Add the seafood mixture, any accumulated juices, and the pasta to the tomato mixture and toss to combine.
- Serve garnished with the parsley.
