Ingredients
- 1 (15-ounce) can pure pumpkin
- 1 (10-ounce) can evaporated milk
- 1 cup light brown sugar
- 3 eggs
- 3 teaspoons pumpkin pie spice
- 1 (15.25-ounce) box yellow cake mix
- 1 cup graham crackers coarsely crushed
- 1/2 cup pecans optional
- 1/2 cup toffee bits optional
- 1 cup butter melted
- vanilla ice cream optional, to taste, for serving
Directions
- Preheat the oven to 350 degrees F.
- Coat a 9x13-inch baking pan with nonstick spray.
- In a large bowl, add the pumpkin, the evaporated milk, the brown sugar, the eggs, and the pumpkin pie spice and stir to combine.
- Evenly pour the pumpkin mixture into the prepared baking pan.
- Evenly sprinkle the yellow cake mix over the pumpkin mixture in the baking pan, but do not stir.
- Evenly top the cake mix in the baking pan with the graham crackers, the pecans, and the toffee bits.
- Evenly pour the melted butter over the cake.
- Bake the cake until the center is set and the edges are lightly browned, about 45-50 minutes.
- Serve topped with the ice cream.
