Ingredients

  • 2 pounds small red potatoes washed
  • water to taste
  • 2/3 cup mayonnaise
  • 1/4 cup buttermilk
  • 2 tablespoons cider vinegar
  • 1 clove garlic minced
  • 1/2 cup celery chopped
  • 2 scallions chopped
  • 1 teaspoon sugar
  • salt to taste
  • black pepper to taste
  • 6 slices bacon cooked and crumbled, for topping

Directions

  • In a large saucepan, add the potatoes and enough of the water to cover them by about 1 inch.
  • Bring the water to a boil and cook the potatoes until they are fork-tender, about 15-20 minutes.
  • Drain the potatoes and allow them to cool.
  • In a large mixing bowl, add the potatoes, the mayonnaise, the buttermilk, the cider vinegar, the garlic, the celery, the scallions, and the sugar gently stir to combine.
  • Season the potato salad with the salt and the black pepper and stir gently until well-combined.
  • Top with the bacon crumbles and serve.
