Ingredients
- 11 ounces Italian sausage ground or links with the casing removed
- 3 cloves garlic minced
- 1/4 cup chicken broth
- 1 (14-ounce) can diced tomatoes
- 1/2 cup heavy cream
- 1 (9-ounce) package refrigerated cheese tortellini
- 2 cups fresh baby spinach loosely packed
- salt to taste
- pepper to taste
- parmesan cheese to taste, freshly grated, for serving
Directions
- In a skillet, cook the sausage over medium-high heat, stirring occasionally until it's browned.
- Drain the fat and leave the sausage in the pan.
- Add the garlic, the chicken broth, the diced tomatoes and their juices, the heavy cream, and the tortellini.
- Cook until the tortellini is cooked through and the sauce has reduced to your desired thickness, about 5-7 minutes.
- Stir in the spinach and cook until wilted.
- Season with the salt and the pepper and stir to combine.
- Serve topped with the parmesan.
