Ingredients
- 2 1/2 cups pre-mixed baking mix such as Bisquickâ„¢, divided
- 1 cup milk
- 2 eggs
- 5 Key limes zested and juiced, plus more, to taste, sliced, for garnish
- 1/2 cup white chocolate chips
- 1/2 cup powdered sugar
- 4 tablespoons butter melted
- 1 (13.5-ounce) can coconut milk
- 1 cup sugar
Directions
- In a large bowl, add 2 cups of the baking mix, the milk, the eggs, and the zest of 5 of the limes and stir to combine into a batter.
- Add the white chocolate chips to the batter and stir to combine.
- Grease a griddle or a cast-iron skillet, then place it over medium heat.
- Pour about 1/4-cupful of the batter onto the hot griddle and cook until the edges are dry, about 1 minute 30 seconds. Flip and cook until the reverse side is golden-brown, about 1 minute 30 seconds.
- Transfer the cooked pancakes to a plate and tent to keep them warm. Continue the cooking process until all of the batter used.
- In a microwave-safe bowl, add the remaining baking mix and microwave it in 30-second intervals, stirring after each interval, until it reaches 165 degrees F, about 1-2 minutes.
- In a small bowl, add the microwaved baking mix, the powdered sugar, and the melted butter and mix until it forms a coarse and crumbly streusel.
- In a small saucepan over medium heat, add the coconut milk, the sugar, and the juice from 5 of the limes and cook, while stirring gently, until the sugar dissolves.
- Top the pancakes evenly with the streusel mixture and the coconut-lime syrup.
- Serve garnished with the extra lime slices.
