Ingredients

  • 8 ounces semisweet chocolate high-quality, broken into pieces
  • 2 teaspoons canola oil divided
  • 1/2 teaspoon peppermint extract divided
  • 25 peppermint candies crushed and divided
  • 8 ounces white chocolate high-quality broken into pieces

Directions

  • Grease a 9x9-inch pan and line it with waxed paper. Set it aside.
  • Place the semisweet chocolate pieces and 1 teaspoon of the canola oil on the top of a double boiler, making sure that the water is just barely simmering.
  • Stir the chocolate mixture frequently and scrape down the sides with a spatula to avoid the chocolate from burning.
  • When the chocolate is completely melted, stir in 1/4 teaspoons of the peppermint extract.
  • Pour the melted chocolate into the previously prepared pan, spreading it evenly over the pan. It should be at the bottom.
  • Garnish half of the peppermint candies over the top of the chocolate layer.
  • Refrigerate the bark until it is completely hardened, about 1 hour.
  • Put the white chocolate and the remaining 1 teaspoon canola oil on top of a double boiler over just barely simmering water.
  • Repeat the same melting and pouring process for the white chocolate, pouring it into the pan on top of the semisweet chocolate.
  • Garnish the top of the melted white chocolate with the remaining peppermint candies.
  • Refrigerate the pan once again until the white chocolate hardens, about 1 hour.
  • When the bark has hardened, remove the candy from its pan.
  • Break the bark into small pieces to serve and share with others.
