Ingredients

  • 1/2 cup cashew butter
  • 3 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/3 cup packed fine blanched almond flour
  • 1/4 cup flaxseed meal plus more as needed
  • 2 tablespoons sprinkles plus more for optional rolling

Directions

  • Line a baking sheet with parchment paper.
  • Add the cashew butter, maple syrup, vanilla extract, and almond extract to a medium bowl, mixing until well-combined and smooth.
  • Add in the almond flour and the flaxseed meal, mixing well until it is combined and a dough begins to form. If the dough seems too wet, add up to 1 tablespoon more of the almond flour or the flaxseed.
  • Fold in the sprinkles.
  • Using a medium cookie scoop, roll the dough into 8 balls.
  • Roll the balls in the remaining sprinkles.
  • Place the balls on the prepared baking sheet.
  • Place the baking sheet in the freezer for at least 30 minutes.
  • Let the balls sit at room temperature for at least 5 minutes before serving.
