Ingredients

  • 1 pound ground chicken
  • 1/4 cup Buffalo hot sauce
  • 1/4 cup carrot shredded
  • 1/4 cup celery shredded
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • pink salt to taste
  • cracked black pepper to taste
  • 1 tablespoon fresh flat-leaf parsley chopped
  • 1 tablespoon fresh chives chopped
  • 1/2 cup ground pork rinds
  • olive oil to taste, for the grill grates
  • 4 hamburgers buns
  • baby greens to taste, for serving
  • blue cheese dressing homemade or store-bought, to taste, for serving

Directions

  • In a large bowl, add the chicken, the Buffalo sauce, the carrot, the celery, the onion powder, the garlic powder, the salt, the pepper, the parsley, the chives, and the pork rinds and gently combine. Be careful not to overmix.
  • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes and up to overnight.
  • Preheat the grill to medium-high.
  • Brush the grill grates with the oil.
  • Divide the chicken mixture into four parts and form them into patties.
  • Grill the burgers until they reach an internal temperature of 165 degrees F, about 4-5 minutes per side.
  • Serve the burgers on the buns, topped with the baby greens and the blue cheese dressing.
