Ingredients

  • 1/4 cup butter
  • 1/8 cup all-purpose flour
  • 1 1/2 cups chicken broth
  • 2 1/2 cups chicken breast meat skinless and boneless, cubed
  • 1 1/2 cups green peas
  • 1 1/2 cups canned mushrooms drained
  • 1 cup carrots cooked and sliced
  • 1/2 onion chopped
  • 1/4 cup red bell pepper chopped
  • 1 (16-ounce) can refrigerated buttermilk biscuits

Directions

  • Preheat the oven to 350 degrees F.
  • In a saucepan over medium heat, melt the butter.
  • Stir the flour into the butter.
  • Stir the chicken broth into the flour mixture and until it thickens.
  • Add the chicken, the peas, the mushrooms, the carrots, the onion, and the bell pepper to the broth mixture, stirring to combine.
  • Bring the chicken mixture to a boil and cook until the meat reaches an internal temperature of 165 degrees F.
  • Pour the chicken mixture into a 9x13-inch baking dish.
  • Place the biscuits evenly over the top of the chicken mixture.
  • Bake the casserole until the biscuits are golden-brown, about 25-30 minutes.
  • Serve.
