Ingredients

  • 2 tablespoons vegetable oil
  • 1 yellow onion finely chopped
  • 2 cloves garlic thinly sliced
  • 1 pound ground beef
  • 1 (1-ounce) package taco seasoning
  • 1 (14.5-ounce) can diced fire-roasted tomatoes
  • 1 (4.25-ounce) can chopped green chiles
  • 1 (15-ounce) can cream of chicken soup
  • 1 (9.25-ounce) bag nacho-cheese-flavored tortilla chips crushed into small pieces
  • fresh cilantro optional, to taste, for garnish
  • 1 1/3 cups cheddar cheese shredded, divided

Directions

  • Preheat the oven to 350 degrees F.
  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Add the onion and sauté until it is softened and translucent, about 6 minutes.
  • Add the garlic to the onion and cook until it is fragrant, about 1 minute.
  • Add the beef to the onion mixture and cook, while breaking it up with a spoon, until it is completely browned, about 5-7 minutes.
  • Add the taco seasoning to the meat mixture and stir to incorporate.
  • Add the tomatoes, the green chiles, and the cream of chicken soup to the meat mixture and mix to combine.
  • Cook the meat mixture, stirring occasionally, until it thickens, about 5 minutes.
  • Transfer the meat mixture from the heat.
  • Pour 1/3 of the meat mixture in the bottom of a 9x13-inch baking dish.
  • Sprinkle 1/3 cup of the cheese over the layer of meat in the dish.
  • Sprinkle 1/2 of the crushed chips over the cheese layer.
  • Add 1/3 of the meat mixture to the baking dish, spreading it evenly over the chips.
  • Repeat the layering process with 1/3 cup of the cheese and the remaining chips.
  • Top the casserole with the remaining meat mixture and the remaining cheese.
  • Cover the baking dish with aluminum foil and bake for 30 minutes.
  • Remove the foil and bake until the cheese begins to brown, about 20 minutes.
  • Allow the dish to cool slightly.
  • Garnish with the cilantro and serve.
