Ingredients
- 8 ounces spaghetti
- 1/2 cup greek yogurt
- 1/4 cup Thai sweet chili sauce
- 2 cloves garlic pressed
- 1/2 lime juiced
- 1 teaspoon sriracha optional
- crushed red pepper flakes to taste
- 8 ounces medium shrimp peeled and deveined
- 1 tablespoon olive oil
- 3 cloves garlic minced
- 1 teaspoon smoked paprika
- kosher salt to taste
- freshly ground black pepper to taste
- 2 tablespoons fresh parsley chopped
Directions
- Preheat the oven to 400 degrees F.
- Cook the spaghetti to al dente, according to the package instructions. Drain, set it aside, and keep it warm.
- Ina medium bowl, combine the yogurt, the sweet chili sauce, the garlic, the lime juice, the sriracha, and the red pepper flakes.
- Place the shrimp in a single layer on a baking sheet and coat with the olive oil, the garlic, the paprika, the salt, and the pepper.
- Roast the shrimp in the oven until the shrimp are just pink, firm, and fully-cooked, about 6-8 minutes.
- Remove the shrimp from the oven.
- In a serving bowl, add the pasta, the shrimp, and the sauce, tossing to combine.
- Garnish with the parsley and serve!
