Ingredients

For the fries:

  • 2 pounds sweet potatoes
  • 1 tablespoon cornstarch
  • 1/2 teaspoon fine sea salt
  • 2 tablespoons extra-virgin olive oil

Optional spices:

  • freshly ground black pepper to taste
  • cayenne pepper to taste
  • garlic powder to taste

Directions

  • Preheat the oven to 425 degrees F with the racks in the lower and upper area of the oven.
  • Line two large baking trays with parchment paper.
  • Peel the sweet potatoes and cut them into long thin pieces around 1/4 inch thick.
  • Cut the potatoes into fries of similar size. This helps ensure the fries will bake evenly in the oven.
  • Divide the fires equally between the two prepared baking trays.
  • In a small bowl, combine the cornstarch and the sea salt.
  • Dust the tops of the sweet potato fries with the cornstarch mixture, making sure all of the fries are evenly coated.
  • Lightly pour the olive oil all over the fries and toss them until the fries are fully and evenly coated in the oil and there are no more powdery spots.
  • Arrange the fries so that they do not overlap and can get crispy.
  • Bake the fries for 20 minutes, making sure to flip them halfway through so they can cook on both sides Move any browned fries that you think might burn towards the middle of the pan and put the pans back into the oven, swapping their positions (former top pan goes to the lower rack and vice versa).
  • Bake the fries until crispy, about 10-18 minutes more. They will be done when the surface of the fries changes from shiny to a more matte, puffed texture.
