Ingredients
For the waffles:
- 2 cups all-purpose flour spooned and leveled
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 1/2 teaspoons ground ginger
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground allspice
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 cup unsalted butter melted and slightly cooled
- 1/4 cup light or dark brown sugar
- 1/4 cup unsulphured or dark molasses
- 3 large eggs
- 1 2/3 cups buttermilk
For the pecan maple syrup:
- 3/4 cup pecan halves
- 1 1/2 cups pure maple syrup
- cranberries to taste
Directions
- Preheat a waffle maker on medium-high heat.
- Preheat the oven to 200 degrees F.
- Place a wire rack on a baking sheet.
- In a large bowl, add the flour, the baking powder, the baking soda, the ginger, the cinnamon, the allspice, the cloves, the nutmeg, and the salt and whisk to combine.
- In a separate large bowl, add the melted butter, the brown sugar, and the molasses and whisk to combine.
- Add the eggs to the butter mixture and whisk to combine.
- Add the buttermilk to the egg mixture and whisk until combined.
- Pour the buttermilk mixture into the dry ingredients mixture and whisk gently until combined into a batter. Do not overmix.
- Coat the preheated waffle maker with nonstick spray.
- Pour about 1/3 cup of the batter into the well of the waffle maker and close the lid.
- Cook the waffle until crisp, about 4-5 minutes.
- Transfer the cooked waffles to the prepared wire rack and keep them warm in the oven while making the rest of the waffles.
- Repeat the cooking process until all of the batter is used.
- In a saucepan or skillet over medium-low heat, add the pecans and toast until golden and subtly fragrant, about 4-5 minutes.
- Reduce the heat to low.
- Add the maple syrup to the pecans and let it sit just until warmed through.
- Serve the waffles topped with the warm pecan maple syrup and the cranberries.
