Ingredients
- 12 chicken thighs boneless and skinless
- 2 medium green bell peppers chopped
- 1 (14.5-ounce) can diced tomatoes with basil oregano, and garlic
- 1 (6-ounce) can tomato paste
- 1 medium onion chopped
- 1/2 cup low-sodium chicken broth
- 1/4 cup dry red wine can substitute low-sodium chicken broth
- 3 cloves garlic minced
- 3/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons cornstarch
- 2 tablespoons water cold
- rice optional, to taste, cooked and hot, for serving
- fresh parsley optional, to taste, minced, for garnish
Directions
- In a 4-5-quart slow cooker, add the chicken thighs.
- In a medium bowl, add the green bell peppers, the tomatoes with basil, oregano, and garlic and their juices, the tomato paste, the onions, the chicken broth, the wine, the garlic, the salt, and the black pepper and stir to combine.
- Pour the tomato mixture over the chicken thighs in the slow cooker.
- Cover the slow cooker and cook until the chicken thighs are tender and cooked through, about 8-10 hours on low.
- In a small bowl, add the cornstarch and the water and whisk until combined and smooth.
- Gradually add the slurry mixture to the chicken mixture, while stirring to combine.
- Cover the slow cooker and cook until the sauce is thickened, about 30 minutes on high.
- Serve over the rice and garnish with the parsley.
