Ingredients
- 8 1/8 tablespoons butter softened and divided into 1/2 cup (8 tablespoons) and 1/8 tablespoon
- 1 cup sour cream
- 1 egg
- 1 (16-ounce) can whole-kernel corn drained
- 1 (16-ounce) can cream-style corn undrained
- 4 1/2 ounces corn muffin mix
- 1 cup cheddar cheese grated
Directions
- Preheat the oven to 375 degrees F.
- Using the 1/8 tablespoon of butter, grease a 2-quart casserole dish.
- In a large bowl, mix the 1/2 cup butter, sour cream, and egg. Stir in the kernel corn, cream-style corn, and corn muffin mix.
- Spoon the mixture into the greased casserole dish. Bake for about 45 minutes.
- Remove the casserole from the oven and add the cheese, stirring well. Return the casserole to the oven.
- Bake until the dish is slightly puffed, bubbly, and browned at the edges, about 15 minutes.
- Remove from the oven and serve hot!
