Ingredients

For the cake:

  • 1 1/2 cups butter softened
  • 3 cups sugar
  • 5 large eggs room temperature
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 3/4 cup 7-Up soda or similar lemon-lime soda

For the glaze:

  • 1 1/2 cups confectioners' sugar
  • 1 tablespoon lemon or lime juice
  • 1-2 tablespoons 7-Up soda
  • 1/2 teaspoon grated lemon or lime zest, optional

Directions

  • Preheat the oven to 350 degrees F.
  • Grease and flour a 10-inch fluted or plain tube pan.
  • In a large bowl, cream the butter and sugar with a hand mixer until light and fluffy, about 5-7 minutes.
  • Add the eggs, one at a time, to the butter mixture, beating well after each addition.
  • Beat the lemon juice and vanilla into the butter mixture.
  • Alternate adding the flour and the 3/4 cup 7-Up to the butter mixture, about 1/3 of each at a time, beating well after each addition.
  • Transfer the batter to the prepared pan.
  • Bake the cake until a toothpick inserted in the center comes out clean, about 1 hour 5 minutes-1 hour 15 minutes.
  • Take the cake out of the oven ​​and cool in the pan for 20 minutes.
  • After 20 minutes, transfer the cake from the pan to a wire rack to cool completely.
  • In a small bowl, mix the confectioners' sugar, lemon juice, and the remaining 7-Up until it reaches the preferred consistency.
  • Stir in the zest.
  • Drizzle the glaze over the cake once the cake is completely cooled.
  • Slice and serve!
