Ingredients
- 1/4 cup butter
- 1/8 cup all-purpose flour
- 1 1/2 cups chicken broth
- 2 1/2 cups chicken breast meat skinless and boneless, cubed
- 1 1/2 cups green peas
- 1 1/2 cups canned mushrooms drained
- 1 cup carrots cooked and sliced
- 1/2 onion chopped
- 1/4 cup red bell pepper chopped
- 1 (16-ounce) can refrigerated buttermilk biscuits
Directions
- Preheat the oven to 350 degrees F.
- In a saucepan over medium heat, melt the butter.
- Stir the flour into the butter.
- Stir the chicken broth into the flour mixture and until it thickens.
- Add the chicken, the peas, the mushrooms, the carrots, the onion, and the bell pepper to the broth mixture, stirring to combine.
- Bring the chicken mixture to a boil and cook until the meat reaches an internal temperature of 165 degrees F.
- Pour the chicken mixture into a 9x13-inch baking dish.
- Place the biscuits evenly over the top of the chicken mixture.
- Bake the casserole until the biscuits are golden-brown, about 25-30 minutes.
- Serve.
