Ingredients

  • 8 jalapeño peppers
  • 8 ounces cream cheese softened
  • 1 green onion minced
  • 3/4 teaspoon garlic powder
  • 1/2 cup sharp cheddar cheese shredded
  • 16 bacon slices

Directions

  • Preheat the grill to medium-high or preheat the oven to 425 degrees F.
  • Cut the stem off of each jalapeño. Then cut them in half lengthwise.
  • Using a small spoon or melon baller, scrape out the seeds and membranes of each jalapeño. This significantly reduces the spiciness of each pepper.
  • Combine the cream cheese, green onion, garlic powder, and cheddar cheese in a small mixing bowl. Stuff the cream cheese mixture into the jalapeño halves.
  • Wrap a piece of bacon around each jalapeño half. Secure the bacon with toothpicks.
  • Refrigerate the jalapeño poppers for at least an hour. This helps to prevent the cheese from melting out when you are grilling or baking them.
  • To grill the poppers, begin by greasing the grill. Then place them on the grill, cut side down, and cook just until the bacon begins to crisp (about 6 minutes).
  • Gently loosen the bacon from the grill and flip the jalapeños over. Reduce the heat to medium-low heat and cook for an additional 10-12 minutes or until the bacon is cooked and the cheese is melted.
  • To bake the poppers in the oven, place them cut side up on a baking sheet that's been lined with foil and sprayed with cooking spray.
  • Bake for 10-15 minutes or until the cheese is bubbling and the bacon is crisp.
  • Serve hot!
