Ingredients
- 4 tablespoons butter melted and divided
- 1 pound Italian sausage casings removed
- 1 medium onion chopped
- 3 cloves garlic minced
- 1/2 red bell pepper chopped
- 1/2 green bell pepper chopped
- 1 tablespoon Italian seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 6 eggs
- 16 small flour tortillas whole wheat or white
- 1 cup cheddar cheese shredded
- salsa optional, for serving
- sour cream optional, for serving
Directions
- Preheat the oven to 400 degrees F. Lightly grease a 9x13-inch baking dish with 2 tablespoons of the melted butter.
- In a large skillet over medium-high heat, cook the sausage until cooked through, about 6-8 minutes.
- Drain the excess grease from the skillet.
- Add the onion and garlic to the skillet until the onion is soft and fragrant, about 5 minutes.
- Add the peppers and cook for 1 minute.
- Add the Italian seasoning, salt, and pepper.
- Whisk together the eggs in a separate mixing bowl.
- Pour the beaten eggs over the sausage mixture.
- Cook the eggs until scrambled, about 5 minutes.
- Assemble the taquitos by scooping a few tablespoons of the sausage mixture on each of the tortillas.
- Top the mixture with the cheddar cheese.
- Tightly roll the tortillas.
- Place the rolled tortillas into the prepared baking dish.
- Brush the tortillas with the remaining 2 tablespoons of the melted butter.
- Bake until the tortillas are golden brown, about 15 minutes.
- Serve with salsa and sour cream while warm!
