Ingredients
For the oats:
- 1 ripe banana peeled
- 1/2 cup low-fat cottage cheese preferably whipped
- 1/4 cup unsweetened almond milk
- 1/4 cup old-fashioned oats
- 1 tablespoon chia seeds
- 1 teaspoon pure vanilla extract
Optional, for topping:
- bananas to taste, sliced
- walnuts to taste, toasted
- cinnamon to taste
Directions
- In a small, microwave-safe bowl or Mason jar, add 1 of the ripe bananas and microwave until it is softened, about 30 seconds.
- Add the cottage cheese to the banana and mash until well-combined.
- Add the almond milk, the oats, the chia seeds, and the vanilla to the banana mixture and stir well to combine.
- Cover the bowl and refrigerate it until the oats are tender and the liquid is almost totally absorbed, at least 6 hours and up to overnight.
- Serve topped with the extra banana slices, the walnuts, and the cinnamon.
