Ingredients

For the corn:

  • 8 ears fresh sweet corn
  • cold water to taste

Optional, for serving:

  • butter to taste
  • sea salt to taste
  • freshly ground black pepper to taste
  • lime wedges to taste

Directions

  • Peel back the corn husks, leaving them attached at the base of each ear of corn.
  • Remove the silks as best as possible.
  • Close the husks back over the corn cobs.
  • In a large pot, add the corn and enough of the water to cover them and allow the corn to soak for 10 minutes.
  • Drain the corn and pat them dry.
  • Preheat the grill or a grill pan to medium-high heat.
  • Pull the husks back, but leave them attached to the corn.
  • Add the corn to the hot grill and cook, while turning the ears every 3-5 minutes, until all sides of the corn are cooked and light char marks appear, about 15 minutes.
  • Transfer the corn from the grill.
  • Tie the husks back with kitchen twine to use as a handle.
  • Serve the corn topped with the butter, the sea salt, the black pepper, and the lime wedges.
