Ingredients
For the corn:
- 8 ears fresh sweet corn
- cold water to taste
Optional, for serving:
- butter to taste
- sea salt to taste
- freshly ground black pepper to taste
- lime wedges to taste
Directions
- Peel back the corn husks, leaving them attached at the base of each ear of corn.
- Remove the silks as best as possible.
- Close the husks back over the corn cobs.
- In a large pot, add the corn and enough of the water to cover them and allow the corn to soak for 10 minutes.
- Drain the corn and pat them dry.
- Preheat the grill or a grill pan to medium-high heat.
- Pull the husks back, but leave them attached to the corn.
- Add the corn to the hot grill and cook, while turning the ears every 3-5 minutes, until all sides of the corn are cooked and light char marks appear, about 15 minutes.
- Transfer the corn from the grill.
- Tie the husks back with kitchen twine to use as a handle.
- Serve the corn topped with the butter, the sea salt, the black pepper, and the lime wedges.
