Ingredients

For the oyster sauce:

  • 2 tablespoons oyster sauce
  • 1 tablespoon chili garlic sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup water

For the beef:

  • 1 pound flank steak thinly sliced
  • 4 cloves garlic minced
  • 1 tablespoon cornstarch
  • 1 egg yolk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

For the stir fry:

  • 2 tablespoons peanut oil divided
  • 1 onion sliced
  • 3.5 ounces shiitake mushrooms sliced
  • 1 red bell pepper sliced into thin strips
  • 4 cups broccoli florets cut into small bite-size pieces
  • 1/3 cup water
  • 20 ounces udon noodles cooked

Directions

  • In a small mixing bowl, combine all of the oyster sauce ingredients and set aside.
  • Add the flank steak to a large bowl.
  • Add the garlic, cornstarch, egg yolk, salt, and pepper. Toss to combine.
  • Heat 1 tablespoon of peanut oil over the stovetop in a large skillet.
  • Add half of the flank steak and brown for about 3 minutes.
  • Work in batches to prevent the steak from sticking together.
  • Once all the beef is cooked, transfer it to a plate for later.
  • Add the remaining tablespoon of peanut oil to the same skillet that you cooked the steak in. Cook the onions and shitake mushrooms for about 5 minutes until the onions are translucent.
  • Add the pepper, broccoli, and 1/3 cup of water and cook until the broccoli is bright green and tender, another 7 minutes or so.
  • Add the cooked udon noodles, beef, and oyster sauce.
  • Toss everything well so that all ingredients are evenly coated in the sauce.
  • Allow the sauce to thicken for another minute or two.
  • Serve and enjoy!
