Ingredients
For the oyster sauce:
- 2 tablespoons oyster sauce
- 1 tablespoon chili garlic sauce
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup water
For the beef:
- 1 pound flank steak thinly sliced
- 4 cloves garlic minced
- 1 tablespoon cornstarch
- 1 egg yolk
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
For the stir fry:
- 2 tablespoons peanut oil divided
- 1 onion sliced
- 3.5 ounces shiitake mushrooms sliced
- 1 red bell pepper sliced into thin strips
- 4 cups broccoli florets cut into small bite-size pieces
- 1/3 cup water
- 20 ounces udon noodles cooked
Directions
- In a small mixing bowl, combine all of the oyster sauce ingredients and set aside.
- Add the flank steak to a large bowl.
- Add the garlic, cornstarch, egg yolk, salt, and pepper. Toss to combine.
- Heat 1 tablespoon of peanut oil over the stovetop in a large skillet.
- Add half of the flank steak and brown for about 3 minutes.
- Work in batches to prevent the steak from sticking together.
- Once all the beef is cooked, transfer it to a plate for later.
- Add the remaining tablespoon of peanut oil to the same skillet that you cooked the steak in. Cook the onions and shitake mushrooms for about 5 minutes until the onions are translucent.
- Add the pepper, broccoli, and 1/3 cup of water and cook until the broccoli is bright green and tender, another 7 minutes or so.
- Add the cooked udon noodles, beef, and oyster sauce.
- Toss everything well so that all ingredients are evenly coated in the sauce.
- Allow the sauce to thicken for another minute or two.
