Ingredients

For the dressing:

  • 1/4 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons white vinegar
  • 1 tablespoon sugar
  • 1 teaspoon poppy seeds
  • salt to taste
  • pepper to taste

For the salad:

  • 3 cups baby spinach
  • 3 cups romaine lettuce or other crispy greens
  • 10 slices of bacon cooked crisp and crumbled
  • 2 cups strawberries washed and quartered
  • 1 ripe avocado sliced
  • 1/4 cup almonds sliced

Directions

  • In a medium bowl, whisk together the Greek yogurt, mayonnaise, white vinegar, sugar, poppy seeds, salt, and pepper.
  • In another medium-sized bowl, combine the baby spinach and romaine lettuce.
  • Divide the mixed greens between two big plates.
  • Top each plate with equal portions of the bacon, strawberries, avocados, and sliced almonds.
  • Drizzle both salads with the dressing.
  • Serve.
