Ingredients
- 2 tablespoons butter softened, plus more, to taste, for greasing the baking dish
- 1 yellow onion chopped
- 3 cups ham cooked and diced
- 1 1/2 cups half-and-half
- 1 1/2 cups heavy cream
- 1/4 cup flour
- black pepper to taste
- 1 cup cheddar cheese grated
- 1 cup Monterey Jack cheese grated
- 3 pounds russet or Yukon Gold potatoes thoroughly washed and sliced 1/8-inch-thick
- parsley to taste, chopped, for garnish
Directions
- Preheat the oven to 350 degrees F.
- Use the extra butter to grease a 9x13-inch baking dish.
- In a large skillet over medium heat, add the remaining 2 tablespoons of the butter and cook until it has melted.
- Add the onions to the melted butter and cook until they begin to become translucent, about 1-2 minutes.
- Add the ham pieces to the onion mixture and cook until they are thoroughly heated, about 3-4 minutes.
- Transfer the skillet from the heat.
- In a microwave-safe bowl, add the half-and-half and the heavy cream and stir to combine.
- Place the bowl in the microwave and heat until the cream mixture is no longer cold, about 1 minute.
- Whisk the flour and the pepper into the cream mixture until it is completely combined.
- In a large bowl, add the cheddar cheese and the Monterey Jack cheese and mix to combine.
- Evenly layer 1/3 of the potato slices in the bottom of the prepared baking dish, then evenly top with 1/3 of the ham mixture, 1/3 of the cheese mixture, and 1/3 of the cream mixture. Repeat this process twice.
- Cover the baking dish with foil and bake, about 40 minutes.
- Discard the foil, then bake again until the potato mixture is bubbly and hot, about 20 minutes.
- Serve the potatoes garnished with the parsley.
