Ingredients
For the sandwiches:
- 1 beef rump roast or bottom round roast
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup barbeque sauce
- 12 croissants split
- 12 slices provolone cheese
Optional toppings:
- tomato to taste, sliced
- lettuce leaves to taste
- red onion to taste
Directions
- Rub the roast with the salt and the pepper and place it into a 5-6-quart slow cooker.
- Cook the roast, covered, on low heat until the meat is tender, 8-10 hours.
- Transfer the roast from the slow cooker and cool slightly.
- Skim the fat from the cooking juices.
- Slice the beef and return it and the strained cooking juices to the slow cooker.
- Add the barbeque sauce to the slow cooker and heat through.
- Preheat the broiler.
- Place the croissant bottoms on a baking sheet and top them with the provolone cheese.
- Broil the croissant bottoms 4-6 inches from the heat source until the cheese is melted, about 1-2 minutes.
- Top the melted cheese slices with the barbeque beef.
- Top the barbeque beef with the tomato, the lettuce, and the red onion.
- Replace the croissant tops and serve.
