Ingredients

  • 1 large egg room temperature
  • 1/3 cup extra virgin olive oil
  • 2/3 cup milk
  • 1 1/2 cups tapioca flour
  • 1/2 cup cheese grated, of your preference
  • 1 teaspoon salt or more to taste

Directions

  • Preheat the oven to 400 degrees F.
  • Grease the wells of a muffin tin.
  • Put all of the ingredients into a blender and pulse until smooth and thoroughly combined.
  • Pour the batter into the wells of a muffin tin, being careful to leave about 1/8 inch of space at the top.
  • Bake the batter until puffy and browned, for about 15-20 minutes.
  • Remove from the oven and let cool for a few minutes.
  • Serve warm!
