Ingredients
For the meatballs:
- 2 pounds ground turkey
- 1 1/2 cups panko breadcrumbs
- 2 large eggs
- 5 cloves garlic minced
- 1/2 red onion finely diced
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 teaspoon Italian seasoning
- 1/2 teaspoon onion powder
- 1/2 cup green onions thinly sliced
For the buffalo sauce:
- 1 cup hot sauce
- 4 tablespoons butter melted
- 1/2 cup Greek yogurt
- 2 tablespoons chives optional, chopped, for garnish
Directions
- Preheat the oven to 400 degrees F.
- Line a large baking sheet with parchment paper and set it aside.
- In a large bowl, add the ground turkey, the panko breadcrumbs, the eggs, the garlic, the red onions, the salt, the black pepper, the Italian seasoning, the onion powder, and the green onions.
- Using clean hands or a mixing spoon, work the ingredients together until fully combined.
- Roll the combined ground turkey mixture together into approximately 1 1/2-inch meatballs.
- Repeat this process until all the mixture has been used, creating approximately 32 meatballs.
- Place the meatballs onto the prepared baking sheet.
- Bake until the outside is golden and cooked and the internal temperature is 165 degrees F, about 25 minutes.
- In a medium bowl, combine the hot sauce and the melted butter.
- Stir in the Greek yogurt.
- Set the Buffalo sauce in the refrigerator until ready to use.
- Top the meatballs with the Buffalo sauce and garnish with the chives.
- Serve.
