Ingredients
For the spaghetti:
- 1 pound chicken breasts boneless and skinless
- 1 (10-ounce) can diced tomatoes with green chilies
- 1 (10.5-ounce) can cream of chicken soup
- 1/2 cup chicken broth
- 1 pound processed cheese such as Velveeta®, cut in small cubes
- 1 (16-ounce) package spaghetti cooked and hot
Optional, for topping:
- cilantro to taste, chopped
- jalapenos to taste, sliced
- scallions to taste, sliced
- cheese to taste, of your choice, shredded
Directions
- In a slow cooker, add the chicken, the tomatoes with green chilies and their juices, the cream of chicken soup, the broth, and the processed cheese and stir to combine.
- Cover the slow cooker and cook on low, until the chicken breasts reach an internal temperature of 165 degrees F, about 4 hours.
- Transfer the chicken breasts to a cutting board and using two forks, shred the chicken.
- Add the spaghetti and the shredded chicken to the cooking liquid in the slow cooker and stir to combine.
- Serve with your favorite toppings.
