Ingredients
For the nachos:
- 1 pound ground beef
- 2 tablespoons taco seasoning
- 1/4 cup water
- 1 (15-ounce) can refried beans
- 16 ounces tortilla chips
- 4 cups cheddar cheese shredded
Optional toppings:
- 1/2 cup sour cream
- 1/2 cup guacamole
- 1/3 cup olives sliced
- 1/2 cup refrigerated salsa
- 1/3 cup cilantro roughly chopped
- 1/4 cup jalapeƱos sliced or pickled
- 1/4 cup red onion diced
- 1/4 cup green onions sliced
Directions
- Preheat the oven to 350 degrees F.
- Line an 18x26-inch baking sheet with parchment paper.
- In a large skillet over medium-high heat, add the ground beef and cook, while crumbling, until the meat is no longer pink, about 5-7 minutes.
- Drain the excess grease and return the cooked ground beef to the skillet.
- Add the taco seasoning to the ground beef and cook, stirring frequently, until fragrant and incorporated, about 1 minute-1 minute 30 seconds.
- Add the water and the refried beans to the ground beef mixture and cook, stirring frequently, until heated through.
- Keep the beef mixture warm.
- Evenly spread the tortilla chips on the bottom of the prepared baking sheet.
- Sprinkle 2 cups of the cheddar cheese over the tortilla chip layer.
- Dot the ground beef mixture over the top of the cheddar cheese layer, aiming for an even layer for optimal coverage.
- Evenly sprinkle the remaining cheddar cheese over the top of the beef layer.
- Bake, uncovered, until the cheese is fully melted, about 5-7 minutes.
- Transfer the nacho mixture from the oven to a wire rack.
- Serve with your favorite toppings.
