Ingredients

For the potatoes and chicken:

  • 2 pounds red potatoes chopped into 1-inch cubes
  • 3 chicken breasts cubed
  • salt to taste
  • pepper to taste

For the sauce:

  • 1/2 cup ranch dressing store-bought or homemade
  • 1/2 cup sour cream
  • 3/4 cup cheddar cheese shredded
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dill
  • 1/2 teaspoon parsley

For the topping:

  • 8 slices bacon cooked, crisp, and crumbled
  • 4 green onions thinly sliced and divided
  • 3/4 cup cheddar cheese shredded

Directions

  • Preheat the oven to 175 degrees F.
  • Grease a 9x13-inch casserole dish.
  • Cook the potatoes in a large pot of boiling, salted water until tender, about 10-15 minutes. Drain and set aside.
  • Place the chicken on a cutting board and season with salt and pepper.
  • Cook the chicken in a pan on the stove-top over medium until cooked through and no longer pink, registering 165 degrees F when measured internally, about 8-10 minutes.
  • Combine the ranch, sour cream, 3/4 cup of the cheese, the pepper, the garlic powder, the dill, and the parsley in a mixing bowl.
  • Add the cooked chicken and potatoes to the prepared casserole dish.
  • Sprinkle the bacon over the top of the chicken and potatoes.
  • Sprinkle 1/2 of the chopped green onions over the top of the casserole dish.
  • Spread the sauce evenly over the mixture in the dish.
  • Finish by sprinkling the remaining 3/4 cup of the cheese over the contents.
  • Bake the dish until the cheese is bubbling and the top has a golden brown color, about 35 minutes.
  • Remove the dish from the oven and garnish with the remaining green onions.
  • Serve warm.
