Ingredients

For the chili:

  • 2 pounds ground beef
  • 2 medium onions chopped
  • 2 garlic cloves minced
  • 3 (10-ounce) cans diced tomatoes with green chilies undrained
  • 1 (28-ounce) can diced tomatoes undrained
  • 2 (4-ounce) cans green chiles chopped, drained
  • 1/2 teaspoon black pepper
  • 2 pounds Velveeta cubed

Optional, for serving:

  • sour cream to taste
  • jalapeño to taste, sliced
  • tomatoes to taste, chopped
  • fresh cilantro to taste, minced
  • tortilla chips to taste

Directions

  • In a large saucepan on the stovetop over medium heat, cook the ground beef, the onions, and the garlic, while crumbling the beef, until the meat is no longer pink, about 5-7 minutes.
  • Drain the excess liquid from the pan.
  • Mix in the tomatoes with green chilies, the diced tomatoes, the green chiles, and the black pepper. Bring the beef mixture to a boil.
  • Reduce the heat and let simmer uncovered for about 10-15 minutes.
  • Stir in the Velveeta cheese until it is fully melted.
  • Top with the sour cream, the jalapeños, the chopped tomatoes, the cilantro, and the tortilla chips.
  • Serve immediately.
