Ingredients
For the chili:
- 2 pounds ground beef
- 2 medium onions chopped
- 2 garlic cloves minced
- 3 (10-ounce) cans diced tomatoes with green chilies undrained
- 1 (28-ounce) can diced tomatoes undrained
- 2 (4-ounce) cans green chiles chopped, drained
- 1/2 teaspoon black pepper
- 2 pounds Velveeta cubed
Optional, for serving:
- sour cream to taste
- jalapeño to taste, sliced
- tomatoes to taste, chopped
- fresh cilantro to taste, minced
- tortilla chips to taste
Directions
- In a large saucepan on the stovetop over medium heat, cook the ground beef, the onions, and the garlic, while crumbling the beef, until the meat is no longer pink, about 5-7 minutes.
- Drain the excess liquid from the pan.
- Mix in the tomatoes with green chilies, the diced tomatoes, the green chiles, and the black pepper. Bring the beef mixture to a boil.
- Reduce the heat and let simmer uncovered for about 10-15 minutes.
- Stir in the Velveeta cheese until it is fully melted.
- Top with the sour cream, the jalapeños, the chopped tomatoes, the cilantro, and the tortilla chips.
- Serve immediately.
