Ingredients
- 10 strips bacon diced
- 1 large onion chopped
- 1 cup carrots diced
- 3 tablespoons all-purpose flour
- 3 cups whole milk
- 1 1/2 cups water
- 2 1/2 cups potatoes cubed
- 1 (15.25-ounce) can whole kernel corn drained
- 2 teaspoons chicken bouillon granules
- black pepper to taste
- 3 cups cheddar cheese shredded
- 2 cups ham cubed
- fresh chives optional, to taste, chopped or diced, for garnish
Directions
- In a Dutch oven over medium heat, add the diced bacon and cook, while stirring, until crisp, about 7-10 minutes.
- Using a slotted spoon, transfer the bacon to paper towels to drain and reserve the drippings in the Dutch oven.
- Over medium heat, add the onions and the carrots to the reserved drippings and cook, while stirring, until tender, about 5 minutes.
- Add the flour to the onion mixture and cook, while stirring, until combined, about 1-2 minutes.
- Gradually add the milk and the water to the onion mixture and stir to combine.
- Bring the milk mixture to a boil, while stirring constantly.
- Cook the milk mixture until thickened, about 2 minutes.
- Reduce the stovetop heat to medium-low or low heat, enough to maintain a simmer.
- Add the potatoes, the corn, the chicken bouillon granules, and the black pepper to the milk mixture and stir to combine.
- Simmer the chowder mixture, uncovered, until the potatoes are tender, about 20 minutes.
- Add the cheddar cheese and the ham to the chowder mixture and cook, while stirring, until the cheese has melted.
- Add the resserved bacon to the chowder mixture and stir to combine.
- Cook the chowder mixture until the bacon is heated through, about 1-3 minutes.
- Serve garnished with the chives.
