Ingredients

  • 2 tablespoons butter softened, plus 1 tablespoon butter, melted divided
  • 1/2 cup yellow onion diced
  • 3 cloves garlic minced
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil
  • 2 1/2 cups chicken broth
  • 1 1/4 cups white long-grain rice
  • 1 (10.75-ounce) can cream of chicken soup
  • 1/2 cup sour cream
  • 1 cup milk
  • 2 teaspoons Dijon mustard
  • 1 cup cheddar cheese shredded
  • 1/3 cup parmesan cheese grated
  • 1 cup chicken cooked
  • 1 cup ham diced
  • 9 slices Swiss cheese
  • 1/3 cup seasoned breadcrumbs

Directions

  • Preheat the oven to 375 degrees F.
  • Grease a 9x13-inch casserole dish.
  • Melt 2 tablespoons of the softened butter in a pan, then add the diced onions and cook them until softened, about 3-5 minutes.
  • Add the garlic, the garlic powder, and the thyme and cook until fragrant, about 1 minute.
  • Stir in the olive oil, the chicken broth, and the rice.
  • Bring the rice mixture to a boil.
  • Reduce the heat to a simmer.
  • Cover and allow it to cook for 15 minutes, undisturbed.
  • Remove the pan from the heat and uncover.
  • Let the rice mixture sit for 10 minutes.
  • Stir in the cream of chicken soup, the sour cream, the milk, the Dijon mustard, the cheddar, the parmesan cheese, the chicken, and the ham.
  • Transfer the chicken mixture to the prepared casserole dish.
  • Layer the Swiss cheese on top of the chicken mixture.
  • Bake until the cheese is bubbly and melted, about 15 minutes.
  • Mix together the remaining melted butter and the breadcrumbs.
  • Sprinkle the breadcrumb mixture on top of the casserole.
  • Bake for 10 minutes, uncovered.
  • Allow the casserole to cool before serving.
  • Serve.
