Ingredients

  • 4 tablespoons butter divided
  • 1 (8-ounce) package frozen seafood mix
  • 4 cloves garlic minced
  • 1 (28-ounce) can whole peeled tomatoes
  • 1/4 teaspoon red pepper flakes optional
  • 8 ounces fettuccine or linguine pasta
  • 1/2 teaspoon salt
  • fresh parsley optional, to taste, for garnish

Directions

  • In a large skillet over medium heat, melt 2 tablespoons of the butter.
  • Add the seafood mix to the melted butter and cook, while stirring, until the seafood mix reaches an internal temperature of 145 degrees F, about 3-5 minutes.
  • Transfer the seafood mixture to a bowl.
  • In the same skillet over medium heat, melt the remaining butter.
  • Add the garlic to the melted butter and cook, while stirring, until the garlic has just softened and becomes very fragrant, about 1-2 minutes.
  • Add the tomatoes and their juices and the red pepper flakes to the garlic and stir to combine.
  • Using a spoon or a spatula, carefully break the tomatoes into pieces.
  • Allow the tomato mixture to come to a simmer.
  • Reduce the heat to medium-low.
  • Simmer the tomato mixture, while stirring occasionally and continuing to break up the tomatoes, until the flavors meld together and the tomato mixture thickens, about 30 minutes.
  • In a large pot of salted, boiling water, add the fettuccine and cook it to al dente, according to the package directions.
  • Drain the pasta.
  • Add the salt to the tomato mixture and stir to combine.
  • Add the seafood mixture, any accumulated juices, and the pasta to the tomato mixture and toss to combine.
  • Serve garnished with the parsley.
