Ingredients

For the vinaigrette:

  • 1/4 cup extra-virgin olive oil
  • 1 1/2 tablespoons apple cider vinegar
  • 1 1/2 teaspoons honey
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon sea salt
  • black pepper to taste

For the salad:

  • 1/4 cup pepitas
  • 5 ounces spring greens salad blend
  • 1/3 cup dried cranberries
  • 1 Granny Smith apple
  • 2 ounces goat cheese crumbled

Directions

  • In a bowl or a jar, add the olive oil, the vinegar, the honey, the Dijon mustard, and the salt and whisk until well-blended.
  • Season the dressing with the black pepper.
  • In a medium skillet over medium heat, add the pepitas and cook, while stirring frequently, until they begin to turn golden, about 2-4 minutes.
  • Transfer the pepitas to a bowl to cool.
  • In a large bowl, add the spring greens salad blend, the dried cranberries, and the toasted pepitas.
  • Just before serving, slice the Granny Smith apple and add the slices to the salad mixture.
  • Add the goat cheese to the salad mixture.
  • Add the dressing to the salad mixture and toss lightly to evenly coat.
  • Serve.
