Ingredients

  • 1 pound fresh jumbo scallops (about 10-12 scallops) patted dry
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons vegetable oil
  • 1/4 cup butter
  • 2 cloves garlic crushed
  • 1 teaspoon Italian seasoning
  • 1 teaspoon parsley finely chopped, for garnish
  • 2 lemon wedges for serving

Directions

  • Evenly season the scallops with the salt and the pepper.
  • In a cast-iron skillet over medium-high heat, add the oil and heat until it begins to sizzle and shimmer.
  • Use tongs to place the seasoned scallops in the hot oil and cook, undisturbed, about 2 minutes.
  • Use the tongs to flip the scallops over, then add the butter and the garlic to the skillet.
  • Evenly sprinkle the scallops with the Italian seasoning, then cook, while constantly basting them with the melted butter, about 2 minutes.
  • Transfer the cooked scallops to a serving plate and evenly sprinkle them with the parsley.
  • Serve the scallops with the lemon wedges.
