Ingredients
- 1 pound fresh jumbo scallops (about 10-12 scallops) patted dry
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 tablespoons vegetable oil
- 1/4 cup butter
- 2 cloves garlic crushed
- 1 teaspoon Italian seasoning
- 1 teaspoon parsley finely chopped, for garnish
- 2 lemon wedges for serving
Directions
- Evenly season the scallops with the salt and the pepper.
- In a cast-iron skillet over medium-high heat, add the oil and heat until it begins to sizzle and shimmer.
- Use tongs to place the seasoned scallops in the hot oil and cook, undisturbed, about 2 minutes.
- Use the tongs to flip the scallops over, then add the butter and the garlic to the skillet.
- Evenly sprinkle the scallops with the Italian seasoning, then cook, while constantly basting them with the melted butter, about 2 minutes.
- Transfer the cooked scallops to a serving plate and evenly sprinkle them with the parsley.
- Serve the scallops with the lemon wedges.
