Ingredients
For the pizza:
- 3 cups all-purpose flour divided
- 1/2 cup cornmeal
- 1 teaspoon salt
- 1 (.75-ounce) package quick-rise yeast
- 2 cups warm water 120-130 degrees F, divided
- 1 tablespoon honey
- 1 pound ground beef
- 1 envelope taco seasoning
- 1 cup refried beans
- 1/3 cup taco sauce
- 2 cups Colby-Monterey Jack cheese shredded
Optional toppings:
- lettuce to taste, shredded
- tomatoes to taste, chopped
- tortilla chips to taste, crushed
- ripe olives to taste, drained and sliced
- avocado to taste, sliced
- sour cream to taste
- salsa to taste
Directions
- Preheat the oven to 400 degrees F.
- Grease a 13x9-inch baking pan.
- In a bowl, combine 2 1/2 cups of the flour, the cornmeal, the salt, and the yeast.
- In another bowl, combine 1 1/4 cups of the water and the honey.
- Gradually add the flour mixture into the water mixture and beat until just moistened.
- Stir enough of the remaining flour into the dough mixture to form a soft dough. Do not knead.
- Let the dough rest for 20 minutes.
- While the dough is resting, in a small skillet over medium heat, cook the beef, while stirring and crumbling, until it is no longer pink. Drain the excess fat.
- Add the taco seasoning and the remaining water to the meat mixture and cook, while stirring, until it has thickened, about 2 minutes.
- Press the dough into the bottom of the prepared baking pan.
- In a bowl, combine the refried beans and the taco sauce.
- Spread the bean mixture over the dough.
- Top the bean mixture with the beef mixture and then with the cheese.
- Bake on a lower oven rack until the crust is golden and the cheese has melted, about 15-18 minutes.
- Let the pizza stand for 5 minutes.
- Serve with the desired toppings.
