Ingredients

  • 3 tablespoons fresh lemon juice
  • 1 teaspoon honey
  • 1 tablespoon plus 1 teaspoon olive oil divided
  • kosher salt to taste
  • black pepper to taste
  • 1 bulb fennel cored and thinly sliced
  • 1 large red pepper thinly sliced
  • 1 small red onion thinly sliced
  • 4 Italian sausage patties
  • whole grain mustard to taste
  • 4 sesame buns toasted
  • fennel fronds optional, for topping

Directions

  • In a large bowl, whisk the lemon juice, the honey, 1 tablespoon of the oil, the salt, and the pepper together.
  • Add the fennel, the red pepper, and the onion to the lemon juice mixture and toss to combine.
  • Allow the fennel mixture to sit, tossing occasionally, for 15 minutes.
  • Heat a grill pan over medium heat.
  • Rub the sausage patties with the remaining oil, then grill them until they are just cooked through, about 4-5 minutes per side.
  • Spread the mustard onto the bottom buns, then top with the burgers.
  • Top the burgers with the fennel mixture, the fronds, and the burger tops.
