Ingredients

  • 3/4 pound ground beef
  • 1/2 cup refried beans
  • 1 (4-ounce) can chopped green chiles drained
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 4 (8-inch) flour tortillas
  • 2 tablespoons butter melted
  • 1 1/3 cups Mexican cheese blend shredded
  • paprika optional, to taste

Directions

  • Preheat the oven to 475 degrees F.
  • Lightly grease a baking sheet.
  • In a large skillet over medium heat, cook the beef, while crumbling the meat, until it is no longer pink, about 5-7 minutes.
  • Drain the fat from the skillet.
  • Stir the beans, the chiles, the oregano, the cumin, and the salt into the beef mixture and cook over medium-low heat until it is heated through, about 3-4 minutes.
  • Brush one side of the tortillas with the butter.
  • Spoon 1/2 cup of the beef mixture over 1/2 of the unbuttered side of the tortillas.
  • Sprinkle the meat with 1/3 cup of the cheese each.
  • Fold the tortillas in half and place them on the prepared baking sheet.
  • Sprinkle the tortillas with the paprika.
  • Bake the quesadillas until they are crisp and golden-brown, about 8-10 minutes.
  • Cut each quesadilla into wedges.
  • Serve hot.
