Ingredients
- 2 (8-ounce) blocks cream cheese
- 1/4 cup sour cream
- 3/4 cup powdered sugar
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon kosher salt
- 1 cup strawberries chopped
- 1/4 cup graham cracker crumbs
Directions
- In a large bowl, add the cream cheese, the sour cream, the powdered sugar, the vanilla, and the salt and use an electric handheld mixer to beat until combined and smooth.
- Add the strawberries to the cream cheese mixture and fold to combine.
- Spoon the mixture evenly into disposable plastic cups.
- Sprinkle the graham cracker crumbs on top of the cream cheese mixture in the plastic cups.
- Insert a popsicle stick into the middle of each of the cream cheese mixtures.
- Freeze the cups until the cheesecake mixture is solid, about 4 hours.
- Serve.
