Ingredients

  • 2 (8-ounce) blocks cream cheese
  • 1/4 cup sour cream
  • 3/4 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon kosher salt
  • 1 cup strawberries chopped
  • 1/4 cup graham cracker crumbs

Directions

  • In a large bowl, add the cream cheese, the sour cream, the powdered sugar, the vanilla, and the salt and use an electric handheld mixer to beat until combined and smooth.
  • Add the strawberries to the cream cheese mixture and fold to combine.
  • Spoon the mixture evenly into disposable plastic cups.
  • Sprinkle the graham cracker crumbs on top of the cream cheese mixture in the plastic cups.
  • Insert a popsicle stick into the middle of each of the cream cheese mixtures.
  • Freeze the cups until the cheesecake mixture is solid, about 4 hours.
