Ingredients

  • 12 large eggs
  • 1/2 cup whole milk
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1 pound bacon cooked and chopped
  • 2 cups cheddar cheese shredded
  • 2 jalapeños seeded and diced
  • fresh cilantro optional, to taste, chopped, for garnish

Directions

  • Preheat the oven to 350 degrees F.
  • Coat a 12-cup muffin tin with cooking spray.
  • In a large mixing bowl, add the eggs, the milk, the salt, and the black pepper and whisk to combine.
  • Evenly divide 1/2 of the bacon, 1/2 of the cheese, and 1/2 of the jalapeños among the prepared muffin cups.
  • Pour the egg mixture into each prepared muffin cup, filling each cup about halfway.
  • Evenly divide the remaining bacon, the remaining cheese, and the remaining jalapeños among the prepared muffin cups.
  • Bake until the eggs are set, about 20-25 minutes.
  • Serve garnished with the cilantro.
