Ingredients
- 12 large eggs
- 1/2 cup whole milk
- 1 teaspoon sea salt
- 1/2 teaspoon freshly cracked black pepper
- 1 pound bacon cooked and chopped
- 2 cups cheddar cheese shredded
- 2 jalapeños seeded and diced
- fresh cilantro optional, to taste, chopped, for garnish
Directions
- Preheat the oven to 350 degrees F.
- Coat a 12-cup muffin tin with cooking spray.
- In a large mixing bowl, add the eggs, the milk, the salt, and the black pepper and whisk to combine.
- Evenly divide 1/2 of the bacon, 1/2 of the cheese, and 1/2 of the jalapeños among the prepared muffin cups.
- Pour the egg mixture into each prepared muffin cup, filling each cup about halfway.
- Evenly divide the remaining bacon, the remaining cheese, and the remaining jalapeños among the prepared muffin cups.
- Bake until the eggs are set, about 20-25 minutes.
- Serve garnished with the cilantro.
