Ingredients
- 1 (4-pound) prime rib roast boneless
- 1/4 cup unsalted butter room temperature
- 4 cloves garlic minced
- 1 tablespoon kosher salt
- 2 teaspoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon ground black pepper
Directions
- In a roasting pan, add the rib roast and allow it to come to room temperature, about 4 hours.
- Preheat the oven to 400 degrees F.
- In a small bowl, add the butter, the garlic, the salt, the olive oil, the thyme, the rosemary, and the black pepper and stir until combined.
- Spread the butter mixture evenly over the outside of the roast.
- Roast the prime rib for 25 minutes.
- Reduce the oven temperature to 225 degrees F.
- Cover the prime rib with foil and roast until it reaches your desired level of doneness, about 1 hour-1 hour 30 minutes for an internal temperature of 145 degrees F for medium. Make sure to start checking the internal temperature of the beef at the 45-minute mark.
- Transfer the prime rib from the oven and let it rest for at least 20 minutes.
- Serve.
