Ingredients
- 3 cloves garlic minced
- 1 tablespoon dried rosemary
- salt to taste
- pepper to taste
- 1 (2-pound) boneless pork loin roast
- 1/4 cup olive oil
- 1/2 cup white wine
Directions
- Set the oven to 350 degrees F.
- Crush the garlic with the rosemary, the salt, and the pepper, and make it into a paste.
- Score the meat with a sharp knife in several places and press in half of the garlic paste in the openings.
- Rub in the meat with the remaining garlic paste and the oil.
- Place the pork loin into the oven, turning and basting the pork with the pan liquids.
- Cook it until the pork is no longer pink in the center, about 1 hour. A thermometer inserted in the center should read 145 degrees F when the pork is fully cooked.
- Remove the roast to a platter.
- Heat the wine in the pan and stir to loosen browned bits of food on the bottom.
