Ingredients
For the chicken:
- 1 (8-ounce) package cream cheese
- 1/2 cup cheddar cheese shredded
- 1/4 cup ranch dressing
- 1/4 cup green onion chopped
- 4 chicken breasts boneless and skinless
- 4 tablespoons olive oil divided
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1 cup Buffalo sauce store-bought or homemade
Optional, for serving:
- ranch dressing to taste
- green onions to taste, chopped
- blue cheese to taste, crumbled
Directions
- In a bowl, add the cream cheese, the cheddar cheese, 1/4 cup of the ranch dressing, and 1/4 cup of the green onions and stir to combine.
- Rub the chicken breasts evenly with 2 tablespoons of the olive oil.
- Season the chicken breasts evenly with the salt and the pepper.
- Cut a wide pocket horizontally in each of the chicken breasts, making sure not to cut all the way through.
- Stuff each of the chicken breasts evenly with the cream cheese mixture.
- In a large skillet over medium-high heat, add the remaining olive oil.
- Add the chicken breasts to the hot oil and cook, flipping them once, until browned but not quite cooked through, about 3 minutes per side. You may need to brown the chicken in batches to avoid overcrowding.
- Add all of the chicken breasts to the skillet in a single layer.
- Pour the Buffalo sauce over the chicken breasts and cover the skillet.
- Simmer the chicken in the Buffalo sauce, covered, until the chicken breasts reach an internal temperature of 165 degrees F, about 15 minutes.
- Serve the chicken topped with the sauce, the extra ranch dressing, the extra green onions, and the blue cheese.
