Ingredients

For the chicken:

  • 1 (8-ounce) package cream cheese
  • 1/2 cup cheddar cheese shredded
  • 1/4 cup ranch dressing
  • 1/4 cup green onion chopped
  • 4 chicken breasts boneless and skinless
  • 4 tablespoons olive oil divided
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 cup Buffalo sauce store-bought or homemade

Optional, for serving:

  • ranch dressing to taste
  • green onions to taste, chopped
  • blue cheese to taste, crumbled

Directions

  • In a bowl, add the cream cheese, the cheddar cheese, 1/4 cup of the ranch dressing, and 1/4 cup of the green onions and stir to combine.
  • Rub the chicken breasts evenly with 2 tablespoons of the olive oil.
  • Season the chicken breasts evenly with the salt and the pepper.
  • Cut a wide pocket horizontally in each of the chicken breasts, making sure not to cut all the way through.
  • Stuff each of the chicken breasts evenly with the cream cheese mixture.
  • In a large skillet over medium-high heat, add the remaining olive oil.
  • Add the chicken breasts to the hot oil and cook, flipping them once, until browned but not quite cooked through, about 3 minutes per side. You may need to brown the chicken in batches to avoid overcrowding.
  • Add all of the chicken breasts to the skillet in a single layer.
  • Pour the Buffalo sauce over the chicken breasts and cover the skillet.
  • Simmer the chicken in the Buffalo sauce, covered, until the chicken breasts reach an internal temperature of 165 degrees F, about 15 minutes.
  • Serve the chicken topped with the sauce, the extra ranch dressing, the extra green onions, and the blue cheese.
