Ingredients
- 12 ounces fettuccine
- 4 slices bacon chopped
- 1 pound chicken tenders cut into 1-inch pieces
- kosher salt to taste
- freshly ground black pepper to taste
- 2 cloves garlic minced
- 4 plum tomatoes chopped
- 1 cup heavy cream
- 5 ounces baby spinach
- 3/4 cup parmesan cheese grated
- 3 tablespoons fresh basil chopped, for garnish
Directions
- In a large pot of salted, boiling water, cook the fettuccine to al dente, according to the package directions.
- Drain the pasta.
- In a large, cold skillet, add the bacon.
- Place the skillet over medium-high heat and cook the bacon, while stirring occasionally, until crispy, about 8 minutes.
- Using a slotted spoon, transfer the bacon to a paper-towel-lined plate to drain.
- Season the chicken with the salt and the pepper.
- In the same skillet over medium-high heat, add the chicken pieces to the bacon drippings and cook undisturbed until golden brown on one side, about 2-3 minutes.
- Cook the chicken pieces, while stirring occasionally, until they reach an internal temperature of 165 degrees F, about 4 minutes.
- Transfer the chicken pieces to the plate with the bacon.
- Reduce the heat to medium.
- Add the garlic and cook, while stirring, until fragrant, about 30 seconds.
- Add the tomatoes and the heavy cream to the skillet and bring to a simmer.
- Add the spinach and cook, while stirring, until just wilted, about 2 minutes.
- Add the bacon, the chicken pieces, the fettuccine, and the parmesan and toss with tongs until everything is well-coated
- Season the pasta mixture with the salt and the pepper.
- Garnish with the basil and serve.
