Ingredients

  • 12 ounces fettuccine
  • 4 slices bacon chopped
  • 1 pound chicken tenders cut into 1-inch pieces
  • kosher salt to taste
  • freshly ground black pepper to taste
  • 2 cloves garlic minced
  • 4 plum tomatoes chopped
  • 1 cup heavy cream
  • 5 ounces baby spinach
  • 3/4 cup parmesan cheese grated
  • 3 tablespoons fresh basil chopped, for garnish

Directions

  • In a large pot of salted, boiling water, cook the fettuccine to al dente, according to the package directions.
  • Drain the pasta.
  • In a large, cold skillet, add the bacon.
  • Place the skillet over medium-high heat and cook the bacon, while stirring occasionally, until crispy, about 8 minutes.
  • Using a slotted spoon, transfer the bacon to a paper-towel-lined plate to drain.
  • Season the chicken with the salt and the pepper.
  • In the same skillet over medium-high heat, add the chicken pieces to the bacon drippings and cook undisturbed until golden brown on one side, about 2-3 minutes.
  • Cook the chicken pieces, while stirring occasionally, until they reach an internal temperature of 165 degrees F, about 4 minutes.
  • Transfer the chicken pieces to the plate with the bacon.
  • Reduce the heat to medium.
  • Add the garlic and cook, while stirring, until fragrant, about 30 seconds.
  • Add the tomatoes and the heavy cream to the skillet and bring to a simmer.
  • Add the spinach and cook, while stirring, until just wilted, about 2 minutes.
  • Add the bacon, the chicken pieces, the fettuccine, and the parmesan and toss with tongs until everything is well-coated
  • Season the pasta mixture with the salt and the pepper.
  • Garnish with the basil and serve.
