Ingredients
For the salmon:
- 1 tablespoon olive oil
- 4 (4-ounce) salmon fillets
- 1/4 teaspoon salt
For the veggies:
- 3 cloves garlic minced
- 1/4 cup sun-dried tomatoes chopped
- 1 cup artichoke hearts chopped
- 2 tablespoons capers drained
- 6 ounces fresh spinach
- salt to taste
Directions
- In a large skillet over medium-high heat, heat the oil.
- Season the salmon fillets evenly with 1/4 teaspoon of the salt.
- Add the fillets, flesh-side down, to the hot oil and sear for 4 minutes.
- Reduce the heat to medium and flip the fillets.
- Sear the fillets until they reach an internal temperature of at least 145 degrees F, about 4-5 minutes.
- Transfer the fillets to a plate.
- In the same skillet, add the garlic, the sun-dried tomatoes, the artichokes, the capers and cook, while stirring, for 1 minute.
- Add the spinach to the veggie mixture and cook, while stirring, until it wilts, about 2-3 minutes.
- Season the veggie mixture with the extra salt.
- Plate the fillets and top with the veggie mixture.
- Serve.
